Summer Orzo Salad

Here’s a recipe I make all summer long with variations.  Now, to start off, there’s only 2 mandatory ingredients, orzo pasta and olive oil, everything else is changeable.  This recipe makes 6-8 side dishes or 4 main dishes.
Cook 8 ounces of orzo in boiling water until just tender.  Rinse in cool water.
