This is for Liz, who will be embarking on her first Crock-Pot Pot Roast soon! This recipe came to me from my ex-mother-in-law, and is really the best pot roast ever! The best part is the leftover juice/water/onions can be used as french onion soup (and it freezes well too!). Between the leftover meat [...]

Potato Tomato Fry-Up
Posted in Cooking, tagged Cooking on August 24, 2009 | Leave a Comment »
I wasn’t sure what to call this. The idea came from this Potato Tomato Tart recipe, but of course I had to do it differently.
1 potato, sliced thinly
1/4 onion, chopped
1/2 bell pepper (or 1/4 each red and green bell pepper), julienned
1/2 zucchini, cut length-wise, then sliced
1 tomato, thinly sliced
Feta cheese
Basil
Heat oil in a skillet and [...]

Ingredients
8 oz dried pasta, any shape (I used bow ties, but I’ve used penne in the past)
1 small jar artichoke hearts, drained
3 roasted red bell peppers
1/2 [...]

I woke up this morning in a panic about driving a moving van/truck to Pittsburgh. I decided to re-evaluate the cost of driving that verses driving a car and having a moving company ship my stuff. It wound up being the same price, so I decided to cancel the self-move and have the [...]
