Potato Tomato Fry-Up

I wasn’t sure what to call this.  The idea came from this Potato Tomato Tart recipe, but of course I had to do it differently.

1 potato, sliced thinly
1/4 onion, chopped
1/2 bell pepper (or 1/4 each red and green bell pepper), julienned

Summer Orzo Salad

Here’s a recipe I make all summer long with variations.  Now, to start off, there’s only 2 mandatory ingredients, orzo pasta and olive oil, everything else is changeable.  This recipe makes 6-8 side dishes or 4 main dishes.

Greek Pasta

I whipped up a triple batch of Greek Pasta the other day.  It’s not so much a recipe, but it was yummy!  The leftovers were good both hot and cold.

Chili Rellanos

I made Chili Rellanos today – so easy and good!
Ingredients
5 mild* chilis (I ordered 6 from Good Apples, but used one for salsa)
1 cup shredded jack and/or cheddar cheese
3large eggs (or egg substitute)
