I made Chili Rellanos today – so easy and good!
Ingredients
5 mild* chilis (I ordered 6 from Good Apples, but used one for salsa)
1 cup shredded jack and/or cheddar cheese
3large eggs (or egg substitute)
1 cup Masa Harina (corn flour, most grocery stores carry it, check the Mexican food aisle)
Water
Directions
Preheat oven to 400 degrees. Wash chilis and make a small slit on the edge of the chili.
Stuff the chili with the shredded cheese.
Crack the eggs and mix with a fork. Place the masa harina in a wide dish. Add the egg mixture to the masa harina to create a batter, adding water as needed to thin it out. Dip the stuffed chilis in the batter twice.
Place the chilis slit side down on oven-safe dish, and bake for 20-30 minutes, until they are golden brown and the chili is no longer tough.
Delicious!
* note: I used spicy chilis and while they’re good, I can only eat 1 chili rellano at a time. My mouth is still on fire 45 minutes after eating one!
I have got to say I have always been afraid of trying to make Chili Rellanos, but you have given me the courage to try. Your recipe is simple and sounds delicious. I will defiantly be attempting to make these. My husband made some home made tortillas so I was looking for something to go along with them and this now become an addition to the platter. Thanks
